ORANGE GINGERBREAD (with glaze on top)

1 c orange juice
rind of 1 orange
1 c molasses
1 c butter/margarine
1 c brown sugar
3 eggs,
2 1/2 c flour
1 tsp salt
1 1/2 tsp soda
1
tsp cinnamon
1 tsp allspice
2 tsp ginger

GLAZE

1 1/2 c icing sugar
enough orange juice to
make it pour

In blender, blend orange juice and rind til rind is ground up. In saucepan, melt butter, add brown sugar and molasses, pour in orange juice mixture and heat until sugar is dissolved - don't let it boil. Cool, then beat in eggs. 

Mix and sift
dry ingredients over wet ones, stirring only til blended. Pour into large cake pan about 9 x 13 ", and bake at 325 F for about an hour. While it's baking make a sugar glaze of icing sugar and enough orange juice to make it pour easily but not too beaten thin. 

When the gingerbread comes out of the oven pour the glaze over it
while it is hot and spread it evenly. Let the gingerbread cool on a rack in the pan. Serve with whipped cream or ice cream as a dessert or with a cup of tea anytime. It's a big cake but won't last long. ( I just eat it as is. Barb)
 

Carrot cake...Sugar Free

1 cup selfrise flour
4 egg whites
1/3 cup canola oil
4 egg whites
3 Splenda sweetner
3  carrots grated in food processor or blender

Combine all in a bowl mix for 2 min on low with mixer. Bake 350 degrees for 30 to 35 min. Test with toothpick at 30 min. 

Frosting

2  packs splenda or Sugar Twin 
2 tablespoons Brown sugar 
1 egg white  
Mix until foamy and spread on top of cooled cake.
