Ham & Tater Slow Cooker Breakfast

1 lb  Frozen Tater Tots
1/2 lb diced ham
1 chopped onion
1 green pepper, diced
1 cup shredded cheddar cheese
6 eggs
1/2 cup milk

In a 4-5 quart crockpot, layer the ingredients in order...tater tots, ham, onions, green peppers, and Cheese (mild/old etc). Repeat layers two more times, ending with cheese.

In a medium mixing bowl, combine eggs and milk and beat with whisk or egg beater until combined. Season with salt and pepper to taste. Pour mixture over layers in crockpot.

Cover crockpot and cook on low, overnight for 10-12 hours. 6-8 servings.

     
Mock Stuffed Cabbage Casserole

1 LB. Ground Beef
1 C. Instant rice, cooked
1 Pkg. Onion Soup Mix
1 Can Tomato Soup & 1 can water
1/4-1/3  Med. head Cabbage, coarsely chopped or sliced
1 Can diced tomatoes (Optional... this is not in the original recipe I got but a nice addition)
 
Brown Meat in a large frying pan, (drain fat),  Add Onion soup Mix and 1 Cup water, simmer 5 minutes.
Add rice, and diced tomatoes, blend evenly.
Grease casserole dish (9x13) or small roaster.
Layer 1/3 of cabbage and 1/2 of meat mixture, alternating (you end up with 4 layers)
Mix tomato soup with water and pour over casserole
 
Cover and bake @ 350 degrees for 30 minutes.
Lower temp to 325 degrees and bake for an additional hour.
If it appears dry- lower temp to 300 deg. and add a little water.
 
Total cooking time 1 1/2 hours
